Trionfo violetto literally means “purple triumph”, and you will agree once you’ve tried it. A gardening friend introduced this variety to us, and we loved its thin, crisp, and flavorful purple pods that reminded us of a gourmet French filet bean. In the garden, the highly ornamental 6′-8′ tall vines have abundant lavender flowers that bloom against lush green leaves with purple veins and purple stems. Like other purple beans, the 7″-10″ long pods seem to magically turn green when cooked but remain tender and flavorful
