Winter squash are the late-growing, less symmetrical, odd-shaped, rough or warty kinds, small to medium in size, but with long-keeping qualities and hard rinds, are usually called winter squash. They belong, almost without exception, to the species Cucurbita maxima or C. moschata. All squash & pumpkins apparently originated in northern Argentina near the Andes, or in certain Andean valleys. It was unknown to the Old World until the 16th century, and the oldest known definite record of it is dated 1591

Sow the seeds outside after all danger of frost has passed. Sow the seeds 1 inch deep, 2 foot apart, in rows 4 to 5 feet apart, in a sunny location of your garden. Work plenty of compost into the soil before planting and fertilize monthly during the growing season. Mulch with black plastic to help retain moisture in the soil and control weeds. Harvest the squash when the skin is tough and cannot be pierced with your fingernail. Store the squash in a cool, dry place for winter use.

LONG ISLAND CHEESE (108 days) Old Long Island Heirloom known as the original "Cheese Wheel" ! Smooth heavily ribbed tanned skin with a deep orange somewhat sweet flesh. Not very prolific, but one of the favorite baking varieties! (6-10 lb.) Long Island Cheese features flattened, deeply ribbed, buff colored fruits and deep-orange sweet flesh. Excellent in pies. Stores well and named for its resemblance to a wheel of cheese.

An Australian heirloom, Jarrahdale has a flattened, deeply ribbed pumpkin shape with a shiny, light blue-gray skin. Weighing in at six to ten pounds, Jarrahdale?s tasty flesh is thick, sweet and rich golden-yellow to orange in color. It has a very small seed cavity and thin, yet extremely hard skin. GREEN STRIPED CUSHAW (110 days) Most common and well-known of the cushaws. 12-lb. squash-fruit has lots of golden flesh ideal for baking or as canned pumpkin. [Introduced before 1893, possibly pre- 1860, then known as 'Improved Cushaw'. Cushaws came from the West Indies, earlier than 1700.] This bulb-shaped pumpkin/winter squash is a reliable producer and the most popular of its class. Large, vigorous vines are resistant to squash vine borer. Fruits average l0 to 12 lbs., about 18" long, and l0" wide at the bowl. Skin is whitish-green with mottled green stripes. The light yellow flesh is slightly sweet, thick, medium-coarse, and fibrous. Fine for pies and baking.
